Product Details
Cantonese roast duck originated in Guangdong Province, China, and is a classic dish in Cantonese cuisine. The Guangdong region is renowned for its rich culinary culture and exquisite cooking techniques, and Cantonese roast duck is one of its most iconic dishes.
We carefully select premium fresh duck meat from Cherry Valley. The ducks are thoroughly washed, their internal organs and excess fat are removed, and then marinated and massaged with salt, scallion-ginger water, natural spices, and chuhou sauce. The abdominal area is stitched up before the skin is blanched, coated with sugar, and air-dried to set its shape. During the initial roasting phase, we use a low temperature—around 150–170°C—to ensure even heat penetration throughout the duck meat. This slow cooking process allows the proteins to coagulate gradually, locking in the juices and enabling the duck meat to fully absorb the flavorful marinade, while preventing rapid moisture loss caused by high temperatures. In the later stage, we increase the temperature to about 200–220°C, causing the duck skin to quickly caramelize and become crispy. By this point, the skin has already set its shape, and the stitched-up abdominal area helps retain the internal juices, resulting in a final product that’s “crispy on the outside, tender on the inside, and leaves an unforgettable aftertaste.”
Serving method
No need to thaw—simply preheat your oven or broiler to 180℃ and bake for 15–20 minutes. After reheating, first pour out the broth from inside, then cut it into pieces, arrange them on a plate, and serve with dipping sauce or plum sauce.
